Read the review of Con Tacto by world-famous wine critic, Stephen Tanzer.
The grapes for Con Tacto were all hand harvested, transported in small boxes that hold a maximum of 35 pounds to treat the clusters as gently as possible. Tedious and rigorous hand sorting of each cluster followed, removing any unwanted grapes or leaves, to allow only the best quality fruit.
The wines were fermented with native yeasts in open-top, one-ton fermenters that yield only 2 barrels.
No enzymes are ever used in the making of our wines.
