Cinq, meaning Five in French, is a limited edition, ten barrel lot (yielding 243 cases) of a purest expression Bordeaux style assemblage. Primarily based on Merlot (30%), followed by equal parts (20% each) of Cabernet Sauvignon, Cabernet Franc, and Malbec, only to be complete with a one-barrel lot of Petit Verdot (10%). Each varietal was harvested and fermented separately, to let each ripen to the fullest potential and to let each one develop their own characteristics in time.
Fire engine red color with deep notes of cranberry, plum, and sweet vanilla. Big and concentrated with lush red and forest fruits, spice and notes of cedar, and balanced acidity, all present through the long finish.
Each bottle is hand-numbered. // Only 2,916 bottles made.
The grapes for Cinq were all hand harvested, transported in small boxes that hold a maximum of 35 pounds to treat the clusters as gently as possible. Tedious and rigorous hand sorting of each cluster followed, removing any unwanted grapes or leaves, to allow only the best quality fruit.
The wines were fermented with native yeasts in open-top, one-ton fermenters that yield only 2 barrels.
Bottled unfined and unfiltered.
